Non-Cajun Cajun Jambalaya
Ingredients
- 1 pound chicken, cubed
- Cajun seasoning
- Andouille sausage
- 1 yellow onion
- 1 large green bell pepper
- 3 celery stalks
- 4-6 garlic cloves
- 2 cups rice
- 2 tsp. W sauce
- 2 bay leaves
- Dried thyme
- Black pepper
- 3 cups chicken broth
- 4 scallions
Steps
- Coat chiken with cajun seasoning, cook, and put aside.
- Cook sausage and put aside.
- Sautee holy trinity.
- Toss everything into a dutch oven, bring to a boil.
- Cover and lower to a simmer until rice is done (25ish minutes).
